Ingredients

  • Basmati rice - 150 grams
  • Fresh okra - 200 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced tomato, ground cumin, ground coriander, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Add the fresh okra to the pot and stir gently to combine with the spices. Cook for an additional 5 minutes.
  6. Drain the soaked rice and add it to the pot along with the vegetable broth. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove from heat, fluff the rice with a fork, and drizzle with lemon juice. Let it sit covered for an additional 5 minutes.
  9. Serve hot, garnished with fresh parsley.
