- Basmati rice - 150 grams
- Fresh okra - 200 grams
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomato, ground cumin, ground coriander, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Add the fresh okra to the pot and stir gently to combine with the spices. Cook for an additional 5 minutes.
- Drain the soaked rice and add it to the pot along with the vegetable broth. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat, fluff the rice with a fork, and drizzle with lemon juice. Let it sit covered for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
