Riz Ma' Adas

Ingredients
- Brown rice - 100 grams
- Green or brown lentils - 75 grams
- Onion - 1 medium, thinly sliced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 400 ml
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning.
- In another pot, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes or until the lentils are tender.
- In the same pot as the lentils, add the rinsed brown rice, cumin, salt, and black pepper. Stir well to combine, then cover and cook for an additional 20 minutes or until the rice is cooked and the liquid is absorbed.
- Once the rice and lentils are cooked, fluff them gently with a fork and mix in the caramelized onions, reserving some for garnish.
- Serve warm, drizzled with lemon juice and topped with fresh parsley and the remaining caramelized onions.
