- Basmati rice - 150 grams
- Water - 400 ml
- Carrot - 1 medium, diced
- Green peas - 100 grams (frozen or fresh)
- Red bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrot and red bell pepper, cooking for about 5 minutes until slightly softened.
- Add the green peas, cumin, coriander, turmeric, salt, and black pepper. Stir to combine and cook for another 2 minutes.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices and vegetables.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, add lemon juice, and garnish with fresh parsley before serving.
