Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (frozen or fresh)
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the diced carrot and red bell pepper, cooking for about 5 minutes until slightly softened.
  5. Add the green peas, cumin, coriander, turmeric, salt, and black pepper. Stir to combine and cook for another 2 minutes.
  6. Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices and vegetables.
  7. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
  8. Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, add lemon juice, and garnish with fresh parsley before serving.
