Ingredients
- Basmati rice - 150 grams
- Water - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Za'atar - 2 tablespoons
- Pine nuts - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
- Toast the pine nuts in the same pot until golden brown, stirring frequently to prevent burning, about 3-4 minutes.
- Drain the soaked rice and add it to the pot, stirring well to combine with the onion, garlic, and pine nuts.
- Sprinkle the za'atar, salt, and black pepper over the rice, and stir to evenly distribute the spices.
- Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
