Ingredients
- Long-grain rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons

- Fresh parsley - 1/2 cup, finely chopped
- Fresh mint - 1/4 cup, finely chopped
- Tomato - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Lemon juice - 2 tablespoons
- Black pepper - 1/4 teaspoon
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice, 1 tablespoon of olive oil, and salt. Stir, cover, and reduce the heat to low. Cook for 15-18 minutes until the rice is fluffy and the water is absorbed.
- While the rice is cooking, prepare the tabbouleh. In a large bowl, combine the chopped parsley, mint, diced tomato, and cucumber.
- In a small bowl, whisk together the lemon juice, 1 tablespoon of olive oil, black pepper, and a pinch of salt to create the dressing.
- Once the rice is cooked, fluff it with a fork and let it cool slightly. Add the rice to the tabbouleh mixture and drizzle with the dressing. Toss gently to combine.
