Ingredients

  • Long-grain rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Fresh parsley - 1/2 cup, finely chopped
  • Fresh mint - 1/4 cup, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1/2 medium, diced
  • Lemon juice - 2 tablespoons
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice, 1 tablespoon of olive oil, and salt. Stir, cover, and reduce the heat to low. Cook for 15-18 minutes until the rice is fluffy and the water is absorbed.
  3. While the rice is cooking, prepare the tabbouleh. In a large bowl, combine the chopped parsley, mint, diced tomato, and cucumber.
  4. In a small bowl, whisk together the lemon juice, 1 tablespoon of olive oil, black pepper, and a pinch of salt to create the dressing.
  5. Once the rice is cooked, fluff it with a fork and let it cool slightly. Add the rice to the tabbouleh mixture and drizzle with the dressing. Toss gently to combine.
  6. Serve the Riz Bil Tabbouleh warm or at room temperature, garnished with extra herbs if desired.
