Ingredients
- Cauliflower - 400 grams
- Chicken thighs (boneless) - 300 grams
- Shawarma spice blend - 2 tablespoons
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Chicken broth (low sodium) - 250 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a bowl, combine the chicken thighs with shawarma spice blend, olive oil, lemon juice, salt, and pepper. Let it marinate for at least 10 minutes.
- Heat a large skillet over medium heat and add olive oil. Sauté the onion and garlic until fragrant and translucent, about 3 minutes.
- Add the marinated chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
- Pour in the chicken broth, cover, and let it simmer for 10 minutes until the chicken is cooked through.
- Stir in the cauliflower rice and mix well. Cover and cook for an additional 5 minutes until the cauliflower is tender.
- Remove from heat and let it sit for 2 minutes before serving.
- Garnish with fresh parsley and serve hot.
