Ingredients

  • Cauliflower - 400 grams
  • Chicken thighs (boneless) - 300 grams
  • Shawarma spice blend - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Chicken broth (low sodium) - 250 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. In a bowl, combine the chicken thighs with shawarma spice blend, olive oil, lemon juice, salt, and pepper. Let it marinate for at least 10 minutes.
  4. Heat a large skillet over medium heat and add olive oil. Sauté the onion and garlic until fragrant and translucent, about 3 minutes.
  5. Add the marinated chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
  6. Pour in the chicken broth, cover, and let it simmer for 10 minutes until the chicken is cooked through.
  7. Stir in the cauliflower rice and mix well. Cover and cook for an additional 5 minutes until the cauliflower is tender.
  8. Remove from heat and let it sit for 2 minutes before serving.
  9. Garnish with fresh parsley and serve hot.
