Ingredients

  • Basmati rice - 1 cup (200g)
  • Vermicelli pasta - 1/3 cup (50g)
  • Vegetable broth - 2 cups (480ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 15 minutes, then drain.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and vermicelli pasta to the pot. Stir frequently until the vermicelli is golden brown, about 3-5 minutes.
  4. Stir in the drained basmati rice, salt, black pepper, and cinnamon powder, mixing well to coat the rice with the oil and spices.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with chopped fresh parsley and serve warm.
