Ingredients
- Basmati rice - 1 cup (200g)
- Vermicelli pasta - 1/3 cup (50g)
- Vegetable broth - 2 cups (480ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon powder - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 15 minutes, then drain.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and vermicelli pasta to the pot. Stir frequently until the vermicelli is golden brown, about 3-5 minutes.
- Stir in the drained basmati rice, salt, black pepper, and cinnamon powder, mixing well to coat the rice with the oil and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley and serve warm.
