Ingredients

  • Cauliflower rice - 200 grams
  • Saffron threads - 0.5 grams
  • Chicken broth - 250 ml
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Onion, finely chopped - 50 grams
  • Garlic, minced - 1 clove
  • Salt - 1 teaspoon
  • Pepper - 0.5 teaspoon
  • Pine nuts, toasted - 30 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm chicken broth for about 10 minutes to release their flavor.
  2. In a medium skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and continue to sauté for another 1-2 minutes until fragrant.
  4. Stir in the cauliflower rice and cook for about 3-4 minutes until slightly tender.
  5. Pour in the remaining chicken broth and the saffron mixture. Season with salt and pepper, stirring well.
  6. Cover the skillet and let it simmer for about 10 minutes until the cauliflower is fully cooked and the liquid is absorbed.
  7. Once done, remove from heat and fluff the rice with a fork. Stir in the toasted pine nuts and chopped parsley before serving.
