Ingredients
- Cauliflower rice - 200 grams
- Saffron threads - 0.5 grams
- Chicken broth - 250 ml
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Onion, finely chopped - 50 grams
- Garlic, minced - 1 clove
- Salt - 1 teaspoon
- Pepper - 0.5 teaspoon
- Pine nuts, toasted - 30 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm chicken broth for about 10 minutes to release their flavor.
- In a medium skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and continue to sauté for another 1-2 minutes until fragrant.
- Stir in the cauliflower rice and cook for about 3-4 minutes until slightly tender.
- Pour in the remaining chicken broth and the saffron mixture. Season with salt and pepper, stirring well.
- Cover the skillet and let it simmer for about 10 minutes until the cauliflower is fully cooked and the liquid is absorbed.
- Once done, remove from heat and fluff the rice with a fork. Stir in the toasted pine nuts and chopped parsley before serving.
