- Long-grain rice - 1 cup
- Fresh spinach - 200 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 2 cups
- Lemon juice - 1 tablespoon
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the chopped spinach to the pot and cook until wilted, about 3-4 minutes.
- Add the long-grain rice to the pot, stirring to combine with the spinach mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed the liquid.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork.
- Drizzle with lemon juice and top with toasted pine nuts if desired before serving.
