Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs, boneless - 200 grams
  • Carrot, diced - 1 medium
  • Green bell pepper, diced - 1 medium
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Allspice powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 400 milliliters
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the diced carrots and green bell pepper, cooking for about 5 minutes until they start to soften.
  5. Add the chicken thighs to the pot and season with salt, black pepper, allspice, and the cinnamon stick. Brown the chicken on all sides for about 5-7 minutes.
  6. Pour in the water, add the bay leaf, and bring to a boil. Cover and let it simmer for 15 minutes.
  7. After 15 minutes, remove the chicken thighs and set aside. Add the soaked and drained rice to the pot, stir well, and return the chicken on top.
  8. Cover the pot and reduce the heat to low. Cook for an additional 15 minutes until the rice is tender and has absorbed the liquid.
  9. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with chopped parsley and serve hot.
