Ingredients
- Basmati rice - 150 grams
- Chicken thighs, boneless - 200 grams
- Carrot, diced - 1 medium
- Green bell pepper, diced - 1 medium
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Bay leaf - 1
- Allspice powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh parsley, chopped - 2 tablespoons (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrots and green bell pepper, cooking for about 5 minutes until they start to soften.
- Add the chicken thighs to the pot and season with salt, black pepper, allspice, and the cinnamon stick. Brown the chicken on all sides for about 5-7 minutes.
- Pour in the water, add the bay leaf, and bring to a boil. Cover and let it simmer for 15 minutes.
- After 15 minutes, remove the chicken thighs and set aside. Add the soaked and drained rice to the pot, stir well, and return the chicken on top.
- Cover the pot and reduce the heat to low. Cook for an additional 15 minutes until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped parsley and serve hot.
