- Basmati rice - 150 grams
- Chicken thighs, boneless - 200 grams
- Chickpeas, canned - 100 grams (drained and rinsed)
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the pot and cook for an additional minute until fragrant.
- Add the chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
- Sprinkle the cumin, cinnamon, allspice, salt, and black pepper over the chicken, stirring to coat evenly.
- Add the drained chickpeas and the soaked rice to the pot, stirring gently to combine all the ingredients.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and has absorbed the water.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes to steam.
- Fluff the rice with a fork and serve hot, garnished with fresh parsley.
