Ingredients

  • Long-grain rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Toasted pine nuts - 2 tablespoons
  • Toasted slivered almonds - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed rice and cook for 2-3 minutes, stirring frequently to coat the rice with oil and toast it slightly.
  5. Add the water, cinnamon stick, bay leaf, salt, and black pepper to the saucepan. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
  7. While the rice is cooking, in a small skillet, toast the pine nuts and slivered almonds over medium heat until golden brown, about 3-5 minutes. Remove from heat and set aside.
  8. Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork, discarding the cinnamon stick and bay leaf.
  9. Serve the rice topped with the toasted nuts and garnished with fresh parsley.
