- Long-grain rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Toasted pine nuts - 2 tablespoons
- Toasted slivered almonds - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed rice and cook for 2-3 minutes, stirring frequently to coat the rice with oil and toast it slightly.
- Add the water, cinnamon stick, bay leaf, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, in a small skillet, toast the pine nuts and slivered almonds over medium heat until golden brown, about 3-5 minutes. Remove from heat and set aside.
- Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork, discarding the cinnamon stick and bay leaf.
- Serve the rice topped with the toasted nuts and garnished with fresh parsley.
