Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 1 cup (240g), cooked
  • Pine nuts - 2 tablespoons (30g), toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced green bell pepper to the pot. Cook for another 5 minutes until the vegetables soften.
  4. Stir in the diced tomato, cinnamon, allspice, salt, and black pepper. Cook for an additional 3 minutes.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables and spices.
  6. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  7. Once the rice is done, fluff it with a fork and gently fold in the cooked chickpeas and toasted pine nuts.
  8. Garnish with chopped fresh parsley before serving.
