Ingredients

  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Pine nuts - 1/4 cup
  • Almonds - 1/4 cup, slivered
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the ground cinnamon, allspice, salt, and black pepper, and cook for another minute to release the spices' aroma.
  5. Add the drained rice to the saucepan, stirring to coat the rice with the onion and spice mixture.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, heat a small skillet over medium heat. Add the pine nuts and slivered almonds, toasting them for 3-5 minutes until golden, stirring frequently to prevent burning.
  8. Once the rice is cooked, fluff it with a fork and stir in the toasted nuts and chopped parsley.
  9. Serve warm, garnished with additional parsley if desired.
