- Basmati rice - 1 cup
- Vegetable broth - 2 cups
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Pine nuts - 1/4 cup
- Almonds - 1/4 cup, slivered
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the ground cinnamon, allspice, salt, and black pepper, and cook for another minute to release the spices' aroma.
- Add the drained rice to the saucepan, stirring to coat the rice with the onion and spice mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat a small skillet over medium heat. Add the pine nuts and slivered almonds, toasting them for 3-5 minutes until golden, stirring frequently to prevent burning.
- Once the rice is cooked, fluff it with a fork and stir in the toasted nuts and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
