Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 2 tablespoons, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot and bell pepper, cooking for another 5 minutes until they begin to soften.
  5. Sprinkle in the ground cumin, ground coriander, salt, and black pepper, stirring to coat the vegetables evenly with the spices.
  6. Drain the soaked rice and add it to the saucepan, mixing well with the vegetables and spices.
  7. Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes, or until the rice is fully cooked and water is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with toasted pine nuts and chopped fresh parsley.
