- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 2 tablespoons, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot and bell pepper, cooking for another 5 minutes until they begin to soften.
- Sprinkle in the ground cumin, ground coriander, salt, and black pepper, stirring to coat the vegetables evenly with the spices.
- Drain the soaked rice and add it to the saucepan, mixing well with the vegetables and spices.
- Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes, or until the rice is fully cooked and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with toasted pine nuts and chopped fresh parsley.
