Ingredients

  • Cauliflower - 400 grams, riced
  • Eggplant - 200 grams, diced
  • Ground beef - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. In the skillet, add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  4. Stir in the diced eggplant and cook for another 5 minutes until it softens.
  5. Add the tomato paste, cinnamon, allspice, salt, and black pepper, mixing thoroughly. Cook for an additional 2-3 minutes.
  6. Meanwhile, in another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the riced cauliflower, sautéing for about 5-7 minutes until tender but not mushy.
  7. Combine the sautéed cauliflower rice with the meat and eggplant mixture, stirring well to combine.
  8. Remove from heat and garnish with fresh parsley before serving.
