- Tomato paste - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat a large skillet over medium heat and add 1 tablespoon of olive oil.
- Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- In the skillet, add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Stir in the diced eggplant and cook for another 5 minutes until it softens.
- Add the tomato paste, cinnamon, allspice, salt, and black pepper, mixing thoroughly. Cook for an additional 2-3 minutes.
- Meanwhile, in another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the riced cauliflower, sautéing for about 5-7 minutes until tender but not mushy.
- Combine the sautéed cauliflower rice with the meat and eggplant mixture, stirring well to combine.
- Remove from heat and garnish with fresh parsley before serving.
