Ingredients

  • Basmati rice - 200 grams
  • Chicken thighs, boneless and skinless - 300 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 3 cloves
  • Tomato, diced - 1 medium (about 150 grams)
  • Vegetable oil - 2 tablespoons
  • Cinnamon stick - 1
  • Cardamom pods - 3
  • Cloves - 4
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Chicken broth - 500 milliliters
  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomato, cinnamon stick, cardamom pods, cloves, bay leaf, salt, black pepper, and turmeric powder. Cook for 3-4 minutes until the tomatoes soften.
  5. Add the chicken thighs to the pot and sauté until they are browned on all sides, about 6-8 minutes.
  6. Pour in the chicken broth, bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
  7. Add the soaked and drained rice to the pot, stir gently, and ensure the rice is submerged in the broth. Cover and cook on low heat for another 20 minutes or until the rice is tender and has absorbed most of the liquid.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and serve garnished with chopped parsley.
