Ingredients

  • Cauliflower Rice - 400 grams
  • Chicken Thighs - 300 grams, boneless and skinless
  • Olive Oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Cardamom - 3 pods, crushed
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Chicken Broth - 250 ml
  • Fresh Parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the chicken thighs to the skillet, season with salt, black pepper, cumin, coriander, turmeric, cinnamon, and cardamom, and cook until browned on all sides, about 5-7 minutes.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 10-12 minutes until the chicken is fully cooked.
  6. Remove the chicken from the skillet and set aside. Add the cauliflower rice to the skillet, stirring to combine with the remaining broth and spices.
  7. Cover and cook for an additional 5-7 minutes until the cauliflower rice is tender.
  8. Slice the cooked chicken and serve it over the cauliflower rice, garnished with fresh parsley.
