- Cauliflower Rice - 400 grams
- Chicken Thighs - 300 grams, boneless and skinless
- Olive Oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Cardamom - 3 pods, crushed
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Chicken Broth - 250 ml
- Fresh Parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for another 1-2 minutes until fragrant.
- Add the chicken thighs to the skillet, season with salt, black pepper, cumin, coriander, turmeric, cinnamon, and cardamom, and cook until browned on all sides, about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 10-12 minutes until the chicken is fully cooked.
- Remove the chicken from the skillet and set aside. Add the cauliflower rice to the skillet, stirring to combine with the remaining broth and spices.
- Cover and cook for an additional 5-7 minutes until the cauliflower rice is tender.
- Slice the cooked chicken and serve it over the cauliflower rice, garnished with fresh parsley.
