- Basmati rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Bell pepper - 1 medium, diced
- Pine nuts - 2 tablespoons, toasted
- Raisins - 2 tablespoons
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomato and bell pepper, cooking for another 3-4 minutes until softened.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
- Pour in the 2 cups of water, then add the toasted pine nuts, raisins, ground cinnamon, ground cumin, salt, and black pepper. Stir to mix evenly.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and water is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork and gently fold in the chopped parsley and mint before serving.
