Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Pine nuts - 2 tablespoons, toasted
  • Raisins - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomato and bell pepper, cooking for another 3-4 minutes until softened.
  5. Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
  6. Pour in the 2 cups of water, then add the toasted pine nuts, raisins, ground cinnamon, ground cumin, salt, and black pepper. Stir to mix evenly.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and water is absorbed.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  9. Fluff the rice with a fork and gently fold in the chopped parsley and mint before serving.
