Ingredients

  • Basmati rice - 150 grams
  • Red lentils - 100 grams
  • Chickpeas (cooked) - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
  2. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cinnamon, and cumin to the pot, cooking for an additional minute until fragrant.
  4. Stir in the red lentils and chickpeas, followed by the vegetable broth. Bring to a boil.
  5. Once boiling, add the soaked rice to the pot, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice and lentils are cooked and the liquid is absorbed.
  6. Fluff the rice with a fork, season with salt and black pepper to taste, and garnish with fresh parsley before serving.
