- Basmati rice - 150 grams
- Red lentils - 100 grams
- Chickpeas (cooked) - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon, and cumin to the pot, cooking for an additional minute until fragrant.
- Stir in the red lentils and chickpeas, followed by the vegetable broth. Bring to a boil.
- Once boiling, add the soaked rice to the pot, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice and lentils are cooked and the liquid is absorbed.
- Fluff the rice with a fork, season with salt and black pepper to taste, and garnish with fresh parsley before serving.
