Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.

- Pour in the water, bring to a boil, then reduce the heat to low and cover the saucepan. Cook for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat, fluff the rice with a fork, and let it sit covered for 5 minutes.
- Stir in the chopped parsley and toasted pine nuts before serving.
