  • Zucchini - 1 medium, diced

  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced carrot, green bell pepper, and zucchini, and cook for about 5 minutes until they start to soften.
  5. Add the soaked and drained rice to the saucepan, then sprinkle in the ground cumin, ground coriander, salt, and black pepper, stirring to combine.
  6. Pour in the water, bring to a boil, then reduce the heat to low and cover the saucepan. Cook for 15-20 minutes, or until the rice is tender and the water is absorbed.
  7. Remove from heat, fluff the rice with a fork, and let it sit covered for 5 minutes.
  8. Stir in the chopped parsley and toasted pine nuts before serving.
