- Basmati rice - 150 grams
- Chicken breast (diced) - 200 grams
- Chickpeas (cooked or canned) - 100 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cinnamon - 1/2 teaspoon
- Fresh parsley (chopped) - for garnish
Steps
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced chicken breast to the pan. Cook until the chicken is browned on all sides, about 7-8 minutes.
- Stir in the ground cumin, ground coriander, cinnamon, salt, and black pepper. Cook for another 2 minutes to toast the spices.
- Add the cooked chickpeas and chicken broth to the pan. Bring to a simmer.
- Rinse the basmati rice under cold water until the water runs clear, then add it to the saucepan. Stir gently to combine.
- Cover the pan and reduce the heat to low. Let it cook for 15-20 minutes, or until the rice is tender and has absorbed the broth.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Serve hot, garnished with chopped fresh parsley.
