Ingredients

  • Basmati rice - 150 grams
  • Chicken breast (diced) - 200 grams
  • Chickpeas (cooked or canned) - 100 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cinnamon - 1/2 teaspoon
  • Fresh parsley (chopped) - for garnish

Steps

  1. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced chicken breast to the pan. Cook until the chicken is browned on all sides, about 7-8 minutes.
  3. Stir in the ground cumin, ground coriander, cinnamon, salt, and black pepper. Cook for another 2 minutes to toast the spices.
  4. Add the cooked chickpeas and chicken broth to the pan. Bring to a simmer.
  5. Rinse the basmati rice under cold water until the water runs clear, then add it to the saucepan. Stir gently to combine.
  6. Cover the pan and reduce the heat to low. Let it cook for 15-20 minutes, or until the rice is tender and has absorbed the broth.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. Serve hot, garnished with chopped fresh parsley.
