- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Water - 300 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and diced chicken to the pan, cooking until the chicken is browned on all sides, about 7-10 minutes.
- Stir in the ground cumin, salt, and black pepper, mixing well to coat the chicken.
- Add the soaked rice and water to the pan, bringing to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- In a separate bowl, mix the plain yogurt and lemon juice together until smooth.
- Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Serve the rice topped with the chicken mixture and drizzle the yogurt sauce over it. Garnish with fresh parsley.
