Ingredients

  • Basmati rice - 150 grams
  • Chicken breast - 250 grams, diced
  • Plain yogurt - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Water - 300 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and diced chicken to the pan, cooking until the chicken is browned on all sides, about 7-10 minutes.
  4. Stir in the ground cumin, salt, and black pepper, mixing well to coat the chicken.
  5. Add the soaked rice and water to the pan, bringing to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  6. In a separate bowl, mix the plain yogurt and lemon juice together until smooth.
  7. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  8. Serve the rice topped with the chicken mixture and drizzle the yogurt sauce over it. Garnish with fresh parsley.
