Ingredients
- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Plant-based yogurt (unsweetened) - 1 cup
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
- Ground cinnamon - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan. Stir to coat the rice with the oil and onion mixture.
- Pour in the water and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and water is absorbed.
- In a small bowl, mix the plant-based yogurt, lemon juice, ground cinnamon, black pepper, and half of the chopped parsley. Set aside.
- Once the rice is cooked, fluff it with a fork and serve it on plates.
- Top each serving with the yogurt mixture and sprinkle with toasted pine nuts and remaining parsley.
