Ingredients

  • Jasmine rice - 100g
  • Zucchini - 2 medium (approximately 200g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 30g, chopped
  • Mint leaves - 10g, chopped
  • Tomato - 1 medium, diced
  • Lemon juice - 1 tablespoon
  • Cucumber - 1/2 medium, diced
  • Red onion - 1/4 small, finely chopped

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
  2. While the rice is soaking, heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the zucchini, diced into small cubes, and cook for 5 minutes until they start to soften.
  4. Drain the soaked rice and add it to the saucepan with the zucchini. Stir to combine.
  5. Pour in the vegetable broth, add salt and pepper, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. Meanwhile, prepare the tabouli by combining chopped parsley, mint, diced tomato, cucumber, red onion, lemon juice, and the remaining tablespoon of olive oil in a bowl. Mix well and season with salt to taste.
  7. Once the rice is cooked, fluff it with a fork and serve it alongside the tabouli salad.
