- Jasmine rice - 100g
- Zucchini - 2 medium (approximately 200g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 250ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 30g, chopped
- Mint leaves - 10g, chopped
- Tomato - 1 medium, diced
- Lemon juice - 1 tablespoon
- Cucumber - 1/2 medium, diced
- Red onion - 1/4 small, finely chopped
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- While the rice is soaking, heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the zucchini, diced into small cubes, and cook for 5 minutes until they start to soften.
- Drain the soaked rice and add it to the saucepan with the zucchini. Stir to combine.
- Pour in the vegetable broth, add salt and pepper, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Meanwhile, prepare the tabouli by combining chopped parsley, mint, diced tomato, cucumber, red onion, lemon juice, and the remaining tablespoon of olive oil in a bowl. Mix well and season with salt to taste.
- Once the rice is cooked, fluff it with a fork and serve it alongside the tabouli salad.
