- Long-grain rice - 150 grams
- Zucchini - 2 medium (approximately 200 grams)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 50 grams, chopped
- Fresh mint - 20 grams, chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Lemon juice - 2 tablespoons
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Drain the rice and add it to the saucepan, stirring for 2-3 minutes until lightly toasted.
- Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and liquid is absorbed.
- While the rice is cooking, prepare the tabbouleh. In a bowl, combine the chopped parsley, mint, diced tomato, and cucumber.
- Drizzle the remaining tablespoon of olive oil and lemon juice over the salad. Toss to combine and season with salt to taste.
- Once the rice is done, remove it from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- Serve the rice on plates topped with sautéed zucchini slices and a generous side of tabbouleh.
