Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized (about 200 grams)
  • Chicken or beef shawarma (cooked) - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 300 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the ground cumin, coriander, paprika, salt, and black pepper, allowing the spices to toast for about 1 minute.
  5. Add the drained rice to the pot, stirring to coat the rice with the spices and onion mixture.
  6. Pour in the chicken or vegetable broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. While the rice is cooking, wash the zucchini and chop it into small cubes. In a separate pan, lightly sauté the zucchini cubes in a little olive oil over medium heat until tender, about 5-7 minutes. Season with salt and pepper.
  8. After the rice has cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and gently mix in the sautéed zucchini and cooked shawarma.
  9. Serve the rice mixture in bowls, garnished with fresh parsley.
