Ingredients
- Basmati rice - 150 grams
- Zucchini - 2 medium-sized (about 200 grams)
- Chicken or beef shawarma (cooked) - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 300 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the ground cumin, coriander, paprika, salt, and black pepper, allowing the spices to toast for about 1 minute.
- Add the drained rice to the pot, stirring to coat the rice with the spices and onion mixture.
- Pour in the chicken or vegetable broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, wash the zucchini and chop it into small cubes. In a separate pan, lightly sauté the zucchini cubes in a little olive oil over medium heat until tender, about 5-7 minutes. Season with salt and pepper.
- After the rice has cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and gently mix in the sautéed zucchini and cooked shawarma.
- Serve the rice mixture in bowls, garnished with fresh parsley.
