- Basmati rice - 150 grams
- Zucchini - 2 medium-sized
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Shawarma spice mix - 1 tablespoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 300 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula.
- Stir in the shawarma spice mix, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse.
- Remove the beef mixture from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
- Slice the zucchini into thin rounds and add them to the skillet. Sauté for about 5 minutes until they are slightly tender.
- Drain the soaked rice and add it to the skillet with the sautéed zucchini. Stir to combine and toast the rice for 2 minutes.
- Pour in the chicken or vegetable broth, bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and gently fold in the beef mixture. Remove from heat and let it sit covered for 5 minutes.
- Serve hot, garnished with fresh parsley.
