Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Shawarma spice mix - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 300 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula.
  4. Stir in the shawarma spice mix, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse.
  5. Remove the beef mixture from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
  6. Slice the zucchini into thin rounds and add them to the skillet. Sauté for about 5 minutes until they are slightly tender.
  7. Drain the soaked rice and add it to the skillet with the sautéed zucchini. Stir to combine and toast the rice for 2 minutes.
  8. Pour in the chicken or vegetable broth, bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  9. Fluff the rice with a fork and gently fold in the beef mixture. Remove from heat and let it sit covered for 5 minutes.
  10. Serve hot, garnished with fresh parsley.
