Ingredients

  • Long grain rice - 150 grams
  • Ground lamb or beef - 200 grams
  • Zucchini - 2 medium-sized
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 large, diced
  • Vegetable oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 300 milliliters

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and ground meat to the skillet, cooking until the meat is browned, about 7-10 minutes.
  4. Stir in the diced tomato, cinnamon, allspice, salt, and black pepper, cooking for another 5 minutes until the mixture is well combined.
  5. Remove the skillet from heat and stir in the chopped parsley. Set aside.
  6. In a separate pot, bring 300 ml of water to a boil. Drain the soaked rice and add it to the boiling water. Cover and cook on low heat for about 15 minutes, until the rice is tender and water is absorbed.
  7. While the rice is cooking, wash the zucchinis and cut them in half lengthwise. Scoop out the insides with a spoon, creating small boats.
  8. Preheat the oven to 180°C (350°F). Fill each zucchini boat with the meat mixture and place them in a baking dish.
  9. Once the rice is ready, serve it alongside the stuffed zucchinis for a complete meal.
