Ingredients
- Basmati rice - 150 grams
- Green lentils - 100 grams
- Zucchini - 2 medium-sized (approx. 200 grams)
- Onion - 1 medium-sized (approx. 100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 500 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, combine the green lentils with 500 ml of water. Bring to a boil, reduce heat, and simmer for about 15 minutes until lentils are tender but not mushy. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic to the skillet and cook for another minute until fragrant.
- Stir in the cumin, coriander, salt, and black pepper, cooking for an additional minute to toast the spices.
- Dice the zucchini and add it to the skillet, sautéing for about 5 minutes until slightly softened.
- Add the drained lentils to the skillet and stir to combine. Cook for another 2-3 minutes.
- Drain the soaked rice and add it to the skillet, stirring well to coat the rice with the mixture.
- Pour 300 ml of water into the skillet, bring to a gentle boil, then cover and reduce heat to low. Cook for 15-20 minutes until the rice is fluffy and the water has been absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes before serving.
