Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Zucchini - 2 medium-sized (approx. 200 grams)
  • Onion - 1 medium-sized (approx. 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, combine the green lentils with 500 ml of water. Bring to a boil, reduce heat, and simmer for about 15 minutes until lentils are tender but not mushy. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add minced garlic to the skillet and cook for another minute until fragrant.
  5. Stir in the cumin, coriander, salt, and black pepper, cooking for an additional minute to toast the spices.
  6. Dice the zucchini and add it to the skillet, sautéing for about 5 minutes until slightly softened.
  7. Add the drained lentils to the skillet and stir to combine. Cook for another 2-3 minutes.
  8. Drain the soaked rice and add it to the skillet, stirring well to coat the rice with the mixture.
  9. Pour 300 ml of water into the skillet, bring to a gentle boil, then cover and reduce heat to low. Cook for 15-20 minutes until the rice is fluffy and the water has been absorbed.
  10. Remove from heat and let it sit covered for an additional 5 minutes before serving.
