Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Zucchini - 2 medium, diced
  • Lebanese sausages (Makanek) - 200 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened and translucent.
  3. Add the sliced Lebanese sausages to the pot, cooking until they are browned, about 5-7 minutes.
  4. Stir in the diced zucchini, cinnamon, allspice, salt, and pepper. Cook for an additional 5 minutes until the zucchini begins to soften.
  5. Drain the soaked rice and add it to the pot, mixing well with the other ingredients.
  6. Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let the dish sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
