Ingredients

  • Basmati rice - 150 grams
  • Chicken breast - 200 grams, diced
  • Zucchini - 2 medium, diced
  • Plain yogurt - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 300 ml
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced chicken breast to the pot, cooking until the chicken is browned on all sides, around 7-8 minutes.
  4. Stir in the diced zucchini, cinnamon, allspice, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
  5. Drain the soaked rice and add it to the pot, stirring gently to combine with the chicken and zucchini mixture.
  6. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice gently with a fork.
  8. Serve the rice topped with a generous dollop of plain yogurt and garnish with fresh parsley.
