- Basmati rice - 150 grams
- Chicken breast - 200 grams, diced
- Zucchini - 2 medium, diced
- Plain yogurt - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 300 ml
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced chicken breast to the pot, cooking until the chicken is browned on all sides, around 7-8 minutes.
- Stir in the diced zucchini, cinnamon, allspice, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the chicken and zucchini mixture.
- Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice gently with a fork.
- Serve the rice topped with a generous dollop of plain yogurt and garnish with fresh parsley.
