Ingredients

  • Long-grain rice - 1 cup
  • Zucchini - 2 medium-sized

  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups
  • Plain yogurt - 1 cup
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh mint - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. While the rice is soaking, prepare the zucchini by washing and slicing them into thin rounds.
  3. In a medium pot, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent, about 3-4 minutes.
  4. Add the minced garlic and zucchini slices to the pot, cooking for another 5-7 minutes until the zucchini is tender.
  5. Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
  6. Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and liquid is absorbed.
  7. In a separate bowl, mix the plain yogurt with lemon juice and chopped mint; set aside.
  8. Once the rice is done, fluff it with a fork and serve it warm, topped with the yogurt mixture.
