- Long-grain rice - 1 cup
- Zucchini - 2 medium-sized

- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups
- Plain yogurt - 1 cup
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh mint - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- While the rice is soaking, prepare the zucchini by washing and slicing them into thin rounds.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent, about 3-4 minutes.
- Add the minced garlic and zucchini slices to the pot, cooking for another 5-7 minutes until the zucchini is tender.
- Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
- Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and liquid is absorbed.
- In a separate bowl, mix the plain yogurt with lemon juice and chopped mint; set aside.
- Once the rice is done, fluff it with a fork and serve it warm, topped with the yogurt mixture.
