- Bell pepper (red or green) - 100 grams, diced
- Carrot - 100 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic, diced zucchini, bell pepper, and carrot to the pot. Sauté for an additional 5-7 minutes until the vegetables are slightly softened.
- Stir in the cumin, cinnamon, salt, and black pepper, mixing well to combine the flavors.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the vegetable mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley before serving.
