Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 200 grams, diced
  • Bell pepper (red or green) - 100 grams, diced
  • Carrot - 100 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced zucchini, bell pepper, and carrot to the pot. Sauté for an additional 5-7 minutes until the vegetables are slightly softened.
  4. Stir in the cumin, cinnamon, salt, and black pepper, mixing well to combine the flavors.
  5. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the vegetable mixture.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh parsley before serving.
