Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and diced zucchini to the pot, cooking for an additional 5 minutes until the zucchini is slightly softened.
- Stir in the drained rice, salt, black pepper, and cinnamon, mixing well to coat the rice with the oil and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- In a separate bowl, mix the keshk with a little water to achieve a pourable consistency.
- Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and serve it on plates, drizzling the keshk sauce over the top and garnishing with fresh parsley.
