  • Cinnamon - 1/4 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and diced zucchini to the pot, cooking for an additional 5 minutes until the zucchini is slightly softened.
  4. Stir in the drained rice, salt, black pepper, and cinnamon, mixing well to coat the rice with the oil and spices.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  6. In a separate bowl, mix the keshk with a little water to achieve a pourable consistency.
