- Basmati rice - 150 grams
- Zucchini - 2 medium, diced
- Chickpeas - 200 grams, cooked or canned
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 400 ml
- Lemon - 1, for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced zucchini and cook for 5-7 minutes until slightly softened.
- Add the cooked chickpeas, diced tomato, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Drain the soaked rice and add it to the skillet. Stir to combine with the vegetable mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Garnish with chopped cilantro and serve with lemon wedges on the side.
