  • Chickpeas - 200 grams, cooked or canned
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 400 ml
  • Lemon - 1, for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced zucchini and cook for 5-7 minutes until slightly softened.
  5. Add the cooked chickpeas, diced tomato, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  6. Drain the soaked rice and add it to the skillet. Stir to combine with the vegetable mixture.
  7. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. Garnish with chopped cilantro and serve with lemon wedges on the side.
