Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized (about 250 grams)
  • Ground lamb or beef - 250 grams
  • Onion - 1 small (about 100 grams), finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 400 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. While the rice is soaking, prepare the kebabs by mixing the ground meat with chopped onion, minced garlic, cumin, allspice, salt, and black pepper in a bowl. Form into small kebabs (about 6 pieces).
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the kebabs for about 5-7 minutes until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil and sauté the zucchini, cut into thin rounds, for about 5 minutes until slightly tender. Season with a pinch of salt and pepper.
  5. Drain the soaked rice and add it to the skillet with the zucchini. Pour in 400 ml of water, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  6. Once the rice is ready, gently fluff it with a fork and stir in the cooked kebabs and chopped parsley.
  7. Serve hot, garnished with additional parsley if desired.
