Ingredients

  • Vegetarian kebab mix - 200 grams
  • Onion - 1 medium (about 150 grams), finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper, cooking for 2 minutes until well combined.
  5. Add the diced zucchini to the skillet and cook for about 5-7 minutes until slightly softened.
  6. Drain the soaked rice and add it to the skillet, stirring to combine with the vegetables.
  7. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. While the rice is cooking, prepare the vegetarian kebabs according to package instructions, either by grilling or pan-frying until golden brown.
  9. Once the rice is done, fluff it with a fork and let it rest for a few minutes before serving.
  10. Serve the rice on plates, topped with the vegetarian kebabs, and garnish with fresh parsley.
