- Tomato paste - 1 tablespoon
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste, cinnamon, allspice, salt, and black pepper, cooking for 2 minutes until well combined.
- Add the diced zucchini to the skillet and cook for about 5-7 minutes until slightly softened.
- Drain the soaked rice and add it to the skillet, stirring to combine with the vegetables.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the vegetarian kebabs according to package instructions, either by grilling or pan-frying until golden brown.
- Once the rice is done, fluff it with a fork and let it rest for a few minutes before serving.
- Serve the rice on plates, topped with the vegetarian kebabs, and garnish with fresh parsley.
