Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Chickpeas - 100 grams, cooked
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and grated zucchini to the skillet. Cook for another 5 minutes, stirring occasionally, until the zucchini is soft.
  4. Drain the soaked rice and add it to the skillet. Stir well to combine with the zucchini mixture.
  5. Pour in the vegetable broth, salt, black pepper, and ground cumin. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, prepare the hummus by blending the cooked chickpeas, tahini, lemon juice, water, and a pinch of salt in a food processor until smooth. Adjust the consistency with more water if needed.
  7. Once the rice is done, fluff it with a fork and let it sit covered for 5 minutes.
  8. Serve the rice warm, garnished with fresh parsley, alongside a generous scoop of hummus.
