- Zucchini, grated - 1 medium (150g)
- Onion, finely chopped - 1 medium (100g)
- Garlic, minced - 2 cloves
- Tomato paste - 2 tablespoons (30g)
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons (30ml)
- Water - 2 cups (500ml)
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and diced lamb to the pot, cooking until the lamb is browned on all sides, about 8-10 minutes.
- Stir in the grated zucchini, tomato paste, cinnamon stick, cumin, allspice, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Add 2 cups of water to the pot, bring to a boil, then reduce the heat to low and cover. Simmer for 15 minutes, allowing the flavors to meld.
- Drain the soaked rice and add it to the pot. Stir gently, ensuring the rice is evenly distributed. Cover and cook on low heat for another 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
