Ingredients

  • Lamb shoulder, diced - 200g
  • Zucchini, grated - 1 medium (150g)
  • Onion, finely chopped - 1 medium (100g)
  • Garlic, minced - 2 cloves
  • Tomato paste - 2 tablespoons (30g)
  • Cinnamon stick - 1
  • Cumin powder - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 2 tablespoons (30ml)
  • Water - 2 cups (500ml)
  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and diced lamb to the pot, cooking until the lamb is browned on all sides, about 8-10 minutes.
  4. Stir in the grated zucchini, tomato paste, cinnamon stick, cumin, allspice, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  5. Add 2 cups of water to the pot, bring to a boil, then reduce the heat to low and cover. Simmer for 15 minutes, allowing the flavors to meld.
  6. Drain the soaked rice and add it to the pot. Stir gently, ensuring the rice is evenly distributed. Cover and cook on low heat for another 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh parsley and serve warm.
