Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized, diced
  • Chickpeas - 100 grams, canned and drained
  • Ground beef - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  2. In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Add minced garlic, cumin, cinnamon, salt, and black pepper to the pan, stirring for about 1 minute until fragrant.
  4. Stir in the diced zucchini and chickpeas, cooking for another 5 minutes until the zucchini starts to soften.
  5. Drain the soaked rice and add it to the saucepan, mixing well with the vegetables and spices.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, prepare the kebabs by mixing ground beef with salt, black pepper, and a pinch of cumin. Form into small patties or skewers.
  8. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the kebabs for about 4-5 minutes on each side until browned and cooked through.
  9. Once the rice is done, fluff it with a fork and stir in chopped parsley.
  10. Serve the rice on plates, topped with kebabs and a wedge of lemon on the side.
