- Basmati rice - 150 grams
- Zucchini - 2 medium-sized, diced
- Chickpeas - 100 grams, canned and drained
- Ground beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
- Add minced garlic, cumin, cinnamon, salt, and black pepper to the pan, stirring for about 1 minute until fragrant.
- Stir in the diced zucchini and chickpeas, cooking for another 5 minutes until the zucchini starts to soften.
- Drain the soaked rice and add it to the saucepan, mixing well with the vegetables and spices.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the kebabs by mixing ground beef with salt, black pepper, and a pinch of cumin. Form into small patties or skewers.
- In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the kebabs for about 4-5 minutes on each side until browned and cooked through.
- Once the rice is done, fluff it with a fork and stir in chopped parsley.
- Serve the rice on plates, topped with kebabs and a wedge of lemon on the side.
