- Long-grain rice - 1 cup (200g)
- Zucchini (kousa) - 2 medium, peeled and diced
- Green lentils - 1/2 cup (100g), rinsed
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons (30ml)
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced zucchini and cook for 5 minutes, stirring occasionally.
- Add the rinsed lentils, vegetable broth, cumin, cinnamon, salt, and black pepper to the pot. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, add the rice to the pot, stir well, cover, and continue cooking for another 15 minutes or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Garnish with chopped parsley and serve warm.
