  • Green lentils - 1/2 cup (100g), rinsed
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups (500ml)
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and ground cumin, and cook for an additional minute until fragrant.
  3. Stir in the grated zucchini and cook for 5 minutes, stirring occasionally until it softens.
  4. Add the rinsed lentils and vegetable broth. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes.
  5. After 20 minutes, stir in the rice, salt, and black pepper. Cover and cook for another 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  7. Serve warm, garnished with chopped fresh parsley.
