- Zucchini - 2 medium-sized, grated
- Green lentils - 1/2 cup (100g), rinsed
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups (500ml)
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground cumin, and cook for an additional minute until fragrant.
- Stir in the grated zucchini and cook for 5 minutes, stirring occasionally until it softens.
- Add the rinsed lentils and vegetable broth. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20 minutes.
- After 20 minutes, stir in the rice, salt, and black pepper. Cover and cook for another 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Serve warm, garnished with chopped fresh parsley.
