- Shawarma spice mix - 2 teaspoons

- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Tomato - 1 medium, diced
- Cucumber - 1 medium, diced
- Radishes - 5-6, thinly sliced
- Lettuce - 1 cup, chopped
- Pita bread - 1 small, toasted and cut into pieces
- Lemon juice - 2 tablespoons
- Mint leaves - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced zucchini and continue to sauté for 5 minutes until softened.
- Stir in the basmati rice and cook for 2-3 minutes, allowing the rice to lightly toast.
- Pour in the vegetable broth, season with salt and black pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
- While the rice is cooking, marinate the sliced chicken with shawarma spice mix, yogurt, salt, and pepper. Let it sit for about 10 minutes.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the marinated chicken for 5-7 minutes until golden and cooked through.
- For the fattoush salad, combine the diced tomato, cucumber, radishes, chopped lettuce, and mint leaves in a bowl. Drizzle with lemon juice and toss well.
- To serve, plate the rice topped with the sautéed zucchini, alongside the chicken shawarma, and a generous portion of fattoush salad. Garnish with toasted pita pieces.
