  • Yogurt - 100 grams
  • Shawarma spice mix - 2 teaspoons
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Radishes - 5-6, thinly sliced
  • Lettuce - 1 cup, chopped
  • Pita bread - 1 small, toasted and cut into pieces
  • Lemon juice - 2 tablespoons
  • Mint leaves - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the diced zucchini and continue to sauté for 5 minutes until softened.
  3. Stir in the basmati rice and cook for 2-3 minutes, allowing the rice to lightly toast.
  4. Pour in the vegetable broth, season with salt and black pepper, and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
  5. While the rice is cooking, marinate the sliced chicken with shawarma spice mix, yogurt, salt, and pepper. Let it sit for about 10 minutes.
  6. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the marinated chicken for 5-7 minutes until golden and cooked through.
  7. For the fattoush salad, combine the diced tomato, cucumber, radishes, chopped lettuce, and mint leaves in a bowl. Drizzle with lemon juice and toss well.
  8. To serve, plate the rice topped with the sautéed zucchini, alongside the chicken shawarma, and a generous portion of fattoush salad. Garnish with toasted pita pieces.
