Ingredients

  • Long-grain rice - 150 grams
  • Zucchini (kousa) - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Fattoush salad mix - 100 grams
  • Pita bread - 2 pieces
  • Za'atar spice - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radishes - 3, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Mint leaves - 1 tablespoon, chopped

Steps

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 20 minutes, then drain.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and sauté for another minute until fragrant. Stir in the zucchini, salt, black pepper, and cumin, cooking for an additional 5 minutes until the zucchini softens.
  4. Add the soaked rice to the pot, stirring well to combine with the vegetables. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
  5. While the rice is cooking, prepare the fattoush salad. In a bowl, combine the diced tomato, cucumber, radishes, parsley, and mint.
  6. Drizzle with lemon juice and the remaining tablespoon of olive oil, seasoning with salt and pepper to taste. Toss to combine and set aside.
  7. For the manakish, preheat the oven to 220°C (428°F). Roll out the pita bread on a floured surface and brush with olive oil. Sprinkle za'atar on top.
  8. Bake the pita in the preheated oven for about 5-7 minutes until crispy and fragrant.
  9. Once the rice is done, fluff it with a fork and serve it alongside the fattoush salad and warm manakish.
