- Long-grain rice - 150 grams
- Zucchini (kousa) - 2 medium-sized
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Fattoush salad mix - 100 grams
- Pita bread - 2 pieces
- Za'atar spice - 1 tablespoon
- Lemon juice - 1 tablespoon
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Radishes - 3, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Mint leaves - 1 tablespoon, chopped
Steps
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 20 minutes, then drain.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and sauté for another minute until fragrant. Stir in the zucchini, salt, black pepper, and cumin, cooking for an additional 5 minutes until the zucchini softens.
- Add the soaked rice to the pot, stirring well to combine with the vegetables. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the fattoush salad. In a bowl, combine the diced tomato, cucumber, radishes, parsley, and mint.
- Drizzle with lemon juice and the remaining tablespoon of olive oil, seasoning with salt and pepper to taste. Toss to combine and set aside.
- For the manakish, preheat the oven to 220°C (428°F). Roll out the pita bread on a floured surface and brush with olive oil. Sprinkle za'atar on top.
- Bake the pita in the preheated oven for about 5-7 minutes until crispy and fragrant.
- Once the rice is done, fluff it with a fork and serve it alongside the fattoush salad and warm manakish.
