- Water - 2 cups
- Ground beef - 100 grams
- Pine nuts - 30 grams, toasted
- Parsley - 1/4 cup, chopped
- Mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Tomatoes - 1 medium, diced
- Cucumber - 1 small, diced
- Radishes - 4, thinly sliced
- Lettuce - 1 cup, shredded
- Kebbeh Nayyeh (raw kebbeh) - 100 grams
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and grated zucchini to the pot, cooking until the zucchini softens, about 5 minutes.
- Stir in the soaked rice, cinnamon, and salt, mixing well to coat the rice in the oil and vegetable mixture.
- Pour in 2 cups of water and bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, prepare the fattoush salad. In a bowl, combine diced tomatoes, cucumber, radishes, and shredded lettuce.
- In a small bowl, whisk together the remaining olive oil, lemon juice, chopped parsley, and mint. Pour this dressing over the salad and toss to combine.
- To serve, fluff the rice with a fork and plate it alongside a portion of the fattoush salad. Add the raw kebbeh on the side for a complete meal.
- Garnish the rice with toasted pine nuts before serving.
