  • Zucchini (Kousa) - 2 medium, grated
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 2 cups
  • Ground beef - 100 grams
  • Pine nuts - 30 grams, toasted
  • Parsley - 1/4 cup, chopped
  • Mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Tomatoes - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radishes - 4, thinly sliced
  • Lettuce - 1 cup, shredded
  • Kebbeh Nayyeh (raw kebbeh) - 100 grams

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and grated zucchini to the pot, cooking until the zucchini softens, about 5 minutes.
  4. Stir in the soaked rice, cinnamon, and salt, mixing well to coat the rice in the oil and vegetable mixture.
  5. Pour in 2 cups of water and bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.
  6. While the rice is cooking, prepare the fattoush salad. In a bowl, combine diced tomatoes, cucumber, radishes, and shredded lettuce.
  7. In a small bowl, whisk together the remaining olive oil, lemon juice, chopped parsley, and mint. Pour this dressing over the salad and toss to combine.
  8. To serve, fluff the rice with a fork and plate it alongside a portion of the fattoush salad. Add the raw kebbeh on the side for a complete meal.
  9. Garnish the rice with toasted pine nuts before serving.
