Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized
  • Ground beef or lamb - 100 grams
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, diced
  • Pine nuts - 30 grams
  • Olive oil - 2 tablespoons
  • Water - 300 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Lemon - 1, juiced
  • Mixed greens (lettuce, parsley) - 100 grams
  • Radishes - 4, thinly sliced
  • Cucumber - 1, diced
  • Hummus - 100 grams

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the ground beef or lamb to the skillet, cooking until browned. Stir in the diced tomato, salt, black pepper, and cinnamon, and cook for an additional 5 minutes.
  4. While the meat mixture cools, prepare the zucchini by cutting off the tops and hollowing them out using a small spoon or vegetable peeler.
  5. Mix the meat filling with the soaked rice and pine nuts until well combined. Stuff the hollowed zucchini with this mixture.
  6. In a pot, bring 300 ml of water to a boil. Add the stuffed zucchini and cover with a lid. Cook on low heat for about 20 minutes until the zucchini are tender.
  7. While the zucchini cooks, prepare the fattoush salad by mixing the mixed greens, sliced radishes, and diced cucumber in a bowl. Drizzle with the remaining olive oil and lemon juice, tossing to combine.
  8. To serve, place the stuffed zucchini on a plate, spoon the fragrant rice on the side, and add a generous dollop of hummus. Serve with the fattoush salad.
