- Vegetable broth - 300 ml
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Pita bread - 2 pieces, cut into triangles
- Tomatoes - 1 medium, diced
- Cucumber - 1 small, diced
- Radishes - 3, sliced
- Green bell pepper - 1/2, diced
- Sumac - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the chopped zucchini to the pot and cook for 5 minutes, stirring occasionally.
- Stir in the soaked rice, vegetable broth, cumin, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender and has absorbed the liquid.
- In a bowl, combine the diced tomatoes, cucumber, radishes, and green bell pepper. Add parsley, mint, lemon juice, and sumac, then mix well to create the fattoush salad.
- In a skillet, toast the pita bread triangles over medium heat until golden brown and crispy, about 3-5 minutes.
- Serve the rice on a plate, topped with the fattoush salad and crispy pita chips on the side.
