  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Pita bread - 2 pieces, cut into triangles
  • Tomatoes - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radishes - 3, sliced
  • Green bell pepper - 1/2, diced
  • Sumac - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the chopped zucchini to the pot and cook for 5 minutes, stirring occasionally.
  4. Stir in the soaked rice, vegetable broth, cumin, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender and has absorbed the liquid.
  5. In a bowl, combine the diced tomatoes, cucumber, radishes, and green bell pepper. Add parsley, mint, lemon juice, and sumac, then mix well to create the fattoush salad.
  6. In a skillet, toast the pita bread triangles over medium heat until golden brown and crispy, about 3-5 minutes.
  7. Serve the rice on a plate, topped with the fattoush salad and crispy pita chips on the side.
