- Basmati rice - 100 grams
- Zucchini - 2 medium, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Radishes - 4, thinly sliced
- Lettuce - 1 handful, torn
- Lemon juice - 1 tablespoon
- Sumac - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced zucchini to the saucepan and cook for 5-7 minutes until they start to soften. Season with salt and black pepper.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the zucchini.
- Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the Fattoush salad. In a large bowl, combine the diced tomato, cucumber, radishes, and torn lettuce.
- In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, and sumac. Pour the dressing over the salad and toss to combine.
- Once the rice is done, fluff it with a fork and stir in the chopped parsley.
- Serve the Riz Bil Kousa alongside the Fattoush salad for a complete meal.
