Ingredients

  • Basmati rice - 100 grams
  • Zucchini - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1/2 medium, diced
  • Radishes - 4, thinly sliced
  • Lettuce - 1 handful, torn
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced zucchini to the saucepan and cook for 5-7 minutes until they start to soften. Season with salt and black pepper.
  4. Drain the soaked rice and add it to the saucepan, stirring to combine with the zucchini.
  5. Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, prepare the Fattoush salad. In a large bowl, combine the diced tomato, cucumber, radishes, and torn lettuce.
  7. In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, and sumac. Pour the dressing over the salad and toss to combine.
  8. Once the rice is done, fluff it with a fork and stir in the chopped parsley.
  9. Serve the Riz Bil Kousa alongside the Fattoush salad for a complete meal.
