- Basmati rice - 1 cup
- Zucchini (kousa) - 2 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Falafel (store-bought or homemade) - 6 pieces
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced zucchini, ground cumin, ground coriander, salt, and black pepper. Cook for another 5 minutes until the zucchini is slightly softened.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the zucchini mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the falafel according to package instructions or fry them if homemade.
- Once the rice is done, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley.
- Serve the rice on plates alongside the crispy falafel and lemon wedges.
