Ingredients

  • Basmati rice - 1 cup
  • Zucchini (kousa) - 2 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Falafel (store-bought or homemade) - 6 pieces
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced zucchini, ground cumin, ground coriander, salt, and black pepper. Cook for another 5 minutes until the zucchini is slightly softened.
  4. Drain the soaked rice and add it to the saucepan, stirring to combine with the zucchini mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, prepare the falafel according to package instructions or fry them if homemade.
  7. Once the rice is done, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley.
  8. Serve the rice on plates alongside the crispy falafel and lemon wedges.
